Sharlotka, the five-ingredient apple cake
Every Russian family has a version. This is ours: sour apples, a cloud of eggs and sugar, nothing else to go wrong.

Ingredients
- 4 sour apples (Antonovka if you're lucky)
- 4 eggs, 200 g sugar
- 200 g flour
- Butter for the tin, a pinch of cinnamon
Method
- Heat the oven to 180 °C. Butter a 24 cm tin and fill it with sliced apples.
- Whisk eggs and sugar for a good 7–8 minutes until pale and tripled.
- Fold in the flour gently, in two goes. Pour over the apples.
- Bake 40 minutes without opening the door. Cool in the tin.
